Care and use

For ordinary dry crumbs on an uncontaminated board, use a dry brush or cloth. Wipe with a barely damp cloth only when needed.
Dry promptly after damp cleaning and let air reach both faces. Never soak or put wood in a dishwasher.
Condition clean, fully dry wood when it looks dry, rather than on a fixed schedule. Let oil absorb overnight and remove excess; cream is an optional later finish.

When washing is necessary

Food residue, grease or contamination requires effective cleaning and appropriate sanitizing. If washing is necessary, use a brief, controlled wash with soap and water on both faces and all edges; never soak or saturate. Towel-dry every side immediately, then provide airflow around both faces. Use a separate board for raw meat, poultry, fish and seafood. Lemon and salt do not replace sanitizing.
